Export your cellar to a CSV file - the second line shows the field names contained in each record

You can delete individual records from your cellar by right-clicking on the wine, then selecting "Delete this Record"

The best way to not have any sample wines in your cellar is to create a new cellar - use the menu command "Cellar, New Cellar"
